Straddling the banks of the Eerste River, the university town of Stellenbosch enjoys international fame for its renowned wine estates and gourmet restaurants.
Kick off your visit on the 30th (Mon): engage your brain at Stellenbosch University Botanical Garden, then see the interesting displays at Franschhoek Motor Museum, then admire all the interesting features of Franschhoek Pass, and finally see the interesting displays at First South African Perfume Museum. On the 31st (Tue), you'll have a packed day of sightseeing: indulge your thirst for a good beer at Cape Brewing Company, steep yourself in history at Boschendal Wine Estate, and then do a tasting at Spier Wine Farm.

You can take a bus from Cape Town to Stellenbosch in an hour. Alternatively, you can drive; or take a train. In December, plan for daily highs up to 30°C, and evening lows to 18°C. Wrap up your sightseeing on the 31st (Tue) early enough to drive to Hermanus.

Renowned as a premier whale-watching destination, Hermanus grew from a quaint fishing village nestled on Walker Bay.
On the 1st (Wed), stroll through Grotto Beach and then get up close to creatures of the deep with a dolphin and whale watching tour. Keep things going the next day: stroll through Stony Point Penguin Colony, then learn about winemaking at Sumaridge Wine Estate, and then kick back and relax at Kwaaiwater.

Getting from Stellenbosch to Hermanus by car takes about 1.5 hours. Other options: do a combination of bus and taxi. In December, daily temperatures in Hermanus can reach 30°C, while at night they dip to 18°C. Finish up your sightseeing early on the 2nd (Thu) so you can go by car to Knysna.

Enshrouded in lush indigenous forest and surrounding a scenic lagoon of the same name, the Garden Route town of Knysna has plenty to offer.
Start off your visit on the 3rd (Fri): take in the dramatic natural features at Knysna Heads, stroll through Knysna Elephant Park, and then stroll through Robberg Nature Reserve. Get ready for a full day of sightseeing on the next day: pause for some serene contemplation at Holy Trinity Church, enjoy the sand and surf at Cola Beach, and then enjoy the sand and surf at Buffalo Bay.

Drive from Hermanus to Knysna in 5.5 hours. Alternatively, you can take a bus. When traveling from Hermanus in January, plan for little chillier days in Knysna, with highs around 28°C, while nights are about the same with lows around 20°C. Wrap up your sightseeing by early afternoon on the 5th (Sun) to allow enough time to travel back home.
