Honestly, just visit if you have time left, only worth the visit if you buy the fruits that are sold outside. The harassment of the waiters is annoying so many people who are approaching you for lunch at the market.

Very vibrant and lively market (not on Sunday to Tuesday) that caters were highly to tourists. This means it is generally safe and expensive. However, it is preferred if you are visiting and a tourist to the more local markets across the bridge which can be difficult to navigate on your own.
The famous Mercado Central is a must-see of Santiago, there are nice restaurants and food, if you go with a guide you will hear a bit of the market's history which is interesting, although the market is smaller than it seems to bit when you see the pictures on the Internet. If you visit the 'Central' you might as well visit the other markets that are nearby.
