Four Pillars Distillery, Healesville

Must see · Distillery · Food & Drink
Four Pillars was created by three mates and one extraordinary still (Cam, Matt, Stu and Wilma). Our first release was a Rare Dry Gin which has gone on to win medals around the world.

We've since launched some pretty extraordinary other gins, including a Barrel Aged Gin and a Navy Strength Gin. You can buy direct from us at www.fourpillarsgin.com.au or from a growing list of great bottle shops and retailers. Oh and we're available in a few markets around the world...Hong Kong, New Zealand, Republic of Ireland, Singapore, and the UK...with more to come.

In terms of our ambition for our first gin, we didn't want a London Dry Gin but we couldn't ignore juniper. The way we have approached it is that the juniper is the canvas and the other botanicals paint the picture.

The tassie pepper is brilliant on the palate, giving us warmth rather than heat. Lemon myrtle is a beautiful, complex and unique alternative to lemon peel.

Perhaps most interesting is our use of whole oranges. It’s unusual to use fresh produce in gin but Australian citrus is highly aromatic and supports the spicier botanicals like coriander, cardamom and star anise.

Ultimately it’s about trying to deliver the best of both worlds…a perfect, classic gin and something that would fascinate and delight even the most hardened gin fanatic…spicy but with great citrus, a truly modern Australian gin.

  • I can’t comment on the distillery itself as I haven’t been there - yet! I do plan to visit it in November. I can highly recommend their gin though. I was introduced to the luscious Four Pillars ‘Bloody Shiraz’ gin about 18 months ago and it has become a ‘must have at all times’ Staple in my home bar. Neat over a little crushed ice - hits the spot every time. Hard to hold back. The Rare Dry is also divine with a little good tonic water or in a dry martini. My daughter and I were fortunate to meet head distiller, Cameron Mackenzie, and co founder, Stuart Gregor, at a ‘Pig Gin’ dinner recently in Canberra. Stuart reminded me of Bill Bailey both in looks and humour- wonderfully entertaining. Cameron was also extremely friendly and entertaining. They both obviously love sharing their creations and I can’t wait to taste their newly released ‘Sticky Carpet’ gin that I have just ordered and looking forward to visiting the distillery itself.
  • Oliver hosted our gin tasting and was such an informative guide. My friend and I walked away with heaps of gin distilling knowledge and as an added bonus was also super helpful giving us pointers on what other places to visit while we were in the Yarra Valley. Great product, location and staff!
